Italian eggplant pasta sauce recipe
How to cook pasta with eggplant?
Ingredients:
take the amount of all ingredients approximately according to your taste
for 2 person
- eggplants - 1-2 pz
- pasta - 160 gr
- tomatoes - 400 gr
- mozzarella - 50 gr
- Parmesan cheese - 1 tablespoon
- olive oil - 80 ml
- vegetable oil - 200 ml (for frying)
- basil
- salt - taste
- garlic - 2 pz
- black olives - taste
- capers - taste
Cooking Method
1. cut the eggplant into cubes
2. salt the eggplants, mix and leave for 15-20 minutes, the eggplants will release water
3. during this time, make tomato sauce
4. pour extra virgin olive oil into the pan, add garlic, add tomatoes and basil leaves, salt and leave to simmer for 15-20 minutes
5. then squeeze the eggplant with your hands to release the water
6. in another pan, fry the eggplants in sunflower oil until golden brown
7. put black pitted olives, capers, fried eggplants in the tomato sauce and simmer all together for 5 minutes
8. boil the Rigatoni al dente pasta in salted water and mix with the eggplant sauce
9. cut the mozzarella into small pieces and add to the pasta
10. add 1 spoonful of Parmigiano cheese and mix well
11. serve hot, garnish with a basil leaf and sprinkle with a little cheese
